I have made pancakes & crumpets (smaller, thicker pancakes) a lot before.
So I decided to try something similar with omelettes - which I have not made myself before.
I made two kinds. The second batch were smaller omelettes (like crumpets) with toppings on (not folded over) and they were delicious. Its my latest invention and I love it.

My dad makes omelettes really well but he had a early morning shift at work this morning so I decided to treat my mum to breakfast in bed ;)
These smaller omleettes are easy to work with and lift when you are finish and you dont have to work with the whole surface area of the pan.
Your list of toppings are only as limited as your imagination.
Our local shop only opens after midday on a Sunday, so I just used what was in the fridge. Some were cheese and ham and some were more creative ;)
GINNY OMELETTES
Ingredients and stuff you need:
1 x blender (checks its squeaky clean before using!)
2 x eggs per person
1 tablespoon water for each 2 x eggs
1 x pinch of salt
1 x shakeabout of pepper
1 x non-stick frying pan/roti pan (checks its squeaky clean before using! i.e. cupboard dust etc)
3 x blobs of butter (not too big, just enough for 1 per omelette)
1 x dishing up plate
1 x egg lifter/spatula (Heat resistant & non stick variety)
1 x tablespoon
3 x individual plates for final serving

Some useful tips on safety, hygiene and stuff!
- Clean all the surfaces and untensils/equipment before bringing out the food.
- Make sure your hands are freshly washed and clean before you start.
- Prepare and set everything out that you will need before you start.
- Make the mix before you heat up your pan.
- For safety NEVER leave a heating pan alone for a second.
- Concentrate on what you are doing.
- A lot of fires occur in the kitchen because of unattended oil pans! I should know as my dad is a Fireman - so we have a fire extinguisher in the kitchen and have been taught how to use it if necessary and so should you!
- Have an adult around when you are cooking! We have a gas stove and naked flames should be treated with respect. Even a conventional stove can give you a burn if you are not careful.
- Don't wear loose/dangly clothing and you should tie up your hair!.
- Don't prepare ham and raw eggs or cheese /salad on the same cutting board! Keep everything seperate and clean up in between!
- Put your toppings on seperate sml plates so they dont mix before you add them to the hot omlette.
THIS IS HOW YOU DO IT!
Crack the eggs, gently and throw them in your squeaky-clean blender.
Add the water, salt and pepper
Zap the blender on for a minute or so (until eggs go light yellow)
*you are adding air to the mix to make your omelette nice and fluffy but not too much! A bit like a bubble bath ;)
After about a minute (maybe less if smaller omelettes) add your toppings and wait another minute (until cheese melts). Don't cook for too little (eggs must be cooked properly for health reasons) or too long (eggs will go brown.
You can use a lid to cover the omelettes whilst they are cooking to seal in heat and speed up cooking time.
If you zap all your eggs at the same time they might go flat but will still taste delicious.
