This weeks baking

We collected some brambles and decided to make some bramble tartlets.


For a bit of extra filling we added some blueberries.

I made the dough and kneaded it well before putting it in the fridge for a bit to cool. We simmered the filling with a little brown sugar and at the end a spoon of corn flour to thicken it. We have this cool tartlet maker and after rolling out the dough you cut the circles with one side and then put the dough circle on the otherside, spoon some mix in and the fold it in half. It works well if you use a little water on the edge of half the circle to help seal it.

After all the tartlets were made, which I did myself, there was a lot of filling left over and I was forced to help hide the evidence. It was delicious.

Small tartlets bake pretty fast so in no time at all, we were all gobbling them up.
